This
is the story of our company from 1904.
The original owner’s name was Chohei. He used to sell one bowl of udon
(traditional Japanese noodles) for five sen (¥0.05).
At that time, a carpenter earned 118 sen per day.
Making udon back then was very different from today. Each and every step was
done by hand. He started kneading the udon dough at 3am, well before dawn.
Then he boiled the noodles wearing his kimono and apron.
Chohei had a noren (a split Japanese curtain) upon which his name was
written. Each morning around 10am, he would hang his noren over the front door
of his restaurant and open up for business, serving noodles until late into the
evening.
Chohei also sold udon by cart. The rumor was that, “Chohei’s udon is very
tasty.” People said, “If you go to Hirota Town (where Chohei lived), you
cannot come back without visiting his restaurant!”
Chohei experimented in making other types of noodles such as sōmen or ramen.
After Chohei passed away, his son Takeo started making noodles with wakame
seaweed, as that was what his town was famous for. Now this soba made with
seaweed is called “wakame soba.”
